The way to deal with the white Asparagus is to clean them as described. Next you throw all the left-overs in a pan with water to make Asparagus soup out of it.

The Asparagus itself is steamed for 20 minutes. The water used for the steaming is added to the soup for the flavour.

The Asparagus is served with nothing more than some butter that is melted on the Asparagus with some crumbled boiled egg on top of it and some grilled ham.

Thanks for the recipe but may I suggest that boiling for 10 to 20 minutes will result in a very overcooked white asparagus with much of its' flavor lost into the boiling water. I would propose either to braise or roast the asparagus as both methods retain all of the asparagus flavor and give better control over texture.

To braise, peel white asparagus as above then place in a pan with 100 ml water, a knob of butter and a pinch of sea salt. Cook covered on medium heat until the tip of paring knife easily pierces the asparagus. At that time remove the lid and reduce the liquid to a glaze. The result is a better taste and texture.
