THIS SUBSTITUTE FOR CREAM IS THE GREATEST. I had my doubts, but I made up a batch and used a cup for a clam chowder I was making that night. I froze the the rest in 1 cup batches (in plastic bags). I have since used them up, and have repeated the recipe many times. I'm always watching the calories, but want to eat well, and I'm also lactose intolerant. This recipe hits the mark and tastes great. I have told many people (they weren't asking me, but I told them any ways) and they all are thankful to me that I was so pushy about it. Please give it a try, I know you'll be happy you did.
