Talk about a healthy grain, I try to use spelt in place of wheat whenever I can! Spelt is a healthy natural grain that makes some of the most delicious products I’ve ever tasted. It’s healthier than wheat for a number of reasons including being easier to digest, which makes its nutrients more readily available to the body. Spelt has more protein and other nutrients as well. The spelt products from www.purityfoods.com are my favorite, I’d suggest anyone looking to improve their diet try spelt!

Thank you, thank you for giving the actual serving size! However, I was disappointed that you only talked about pearled barley (although am proud of you that you owned up that it is not a true 'whole grain'). The hulled barley is delicious and a whole grain. Also, it doesn't take nearly as long to cook as most articles say it does.

Jane! I too just recently started using spelt and i love it. I found out that I have a sensitivity to wheat a few months back so I started doing some research on spelt and decided to give it a try. It has made a dramatic impact in how I have been feeling. My stomach feels so much better and I have more energy overall. My neighbor got me hooked on the Vita-Spelt products [www.purtiyfoods.com] as well, and I really enjoy the flours and the pastas. I made pumpkin muffins this week and they were really good.

Hey Jane! I too have been using Vita-Spelt products and I really like them. About 4 months ago, I found out that I had a sensitivity to wheat. So I did some research and came across spelt. So far so good, my stomach is feeling much better and I finally have more energy [for me that was the biggest challenge]. My favorites, are their pastas and granolas. This weekend I baked pumpkin muffins with their flour and they were awesome. I am not sure if you have checked out their cookbooks, but I just got mine last week and the recipes look really good. I absolutely love short grain brown rice but find it so difficult to cook like they do in
some restaurants where the grains are moist. Mine come out dry. I am not sure why because
I am using this method................in a enamel coated cast iron saucepan.
