Easy steps to a perfect omelet, plus great filling ideas.

The fastest meal on the planet is a simple folded French-style omelet. Once you have mastered the technique, as long as you have a few eggs on hand you will be able to whip up a healthful, satisfying repast that’s perfect anytime.

1. After cooking one side, place the skillet under the broiler in the oven. This will cook the uncooked, top side of the omelet, Use a cast iron skillet so it does not melt under the broiler. Also, this is a good way to melt cheese onto the omelet.
2. Flip the omelet into a second frying pan to cook the still liquid top side, which is now the bottom side.
