Following knee surgery and subsequent complications, during which time we found out I was borderline diabetic, I was at risk for congestive heart failure, and my cholesterol was about 3x what it should have been - My doctor paired me with a Dietitian in his office who has me working on a TLC "diet" (Therapeutic Lifestyle Change). I have to make a concerted effort to avoid bad (i.e. often tasty and easy) and prepare healthier, more vegetable rich meals. Lucky for me I do love all kinds of vegetables, but because of my fast food to go lifestyle I hadn't much experience with making veggies other than the basic mashed potato or occasional steamed dish. Soon after I started my TLC I found Eating Well and have been so grateful for the delicious recipes that fit exactly into my new food lifestyle. This article for preparing veggies of all kinds is very much appreciated as it helps me think through what is easy and possible for me to incorporate daily.
Best of all, thanks to the inspiration of Eating Well showing me how easy eating well can be, my health dramatically improved in the first 2 months and my doctor was shocked and impressed I was able to avoid needing any medications at all to correct my health troubles! I've sustained this now for 5 months and have no plans for falling off the TLC wagon - so I look forward to Eating Well helping me continue to eat well!!

I wish there was one list that showed specific roasting times for each vegetable - so if I want to raost a variety at once, I would know which one to start first & when to add each additional veggie to the roasting pan
