For a quick salsa: Dice mango, jalapeño and red onion. Combine and add a splash of lime juice.
For a quick dessert: Stir diced mango and crystallized ginger into vanilla frozen yogurt.
To Cut a Fresh Mango:
1. Slice both ends off the mango with a sharp knife, making a stable flat base and revealing the long, slender seed inside.
2. Stand the fruit upright and remove the skin.
3. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces.
4. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side. Cut into desired shape.
