Skirt steak

Skirt steak: Skirt steak is a very thin and flavorful cut from the beef diaphragm. It is sometimes referred to as fajita steak. Skirt steak is tender if cooked quickly over high heat; if overcooked it can be rubbery and tough. This cut is not always available in supermarkets so you may have to ask at the meat counter.
