Calabaza: The big, vibrant orange native pumpkin called giraumon in the French West Indies, and calabaza everywhere else in the Caribbean, produces soups with a velvety consistency and concentrated flavor. Look for calabazas at Hispanic or West Indian markets. If unavailable, use a firm northern squash, such as butternut or Hubbard.
