When we come home with pounds of peppers from the farmers’ market or find a bumper crop in our garden...we start roasting. Roasting imparts a subtle smokiness and brings out the sweet flavor of bell peppers or tames the heat of spicy jalapeño peppers. Plus, the sweet scent of roasting peppers is magical. Roasted bell peppers are great on anything from pizza to salad. We roast spicy poblanos for our Squash-Stuffed Roasted Poblano Peppers. Roasted peppers are great to have on hand, so during this season we take the time to roast, peel and seed peppers so we can put them up in the freezer to enjoy all winter long.
