How to Prepare Fresh Pineapple

When winter is at its darkest, turn to fresh pineapple for a hit of sunshine.

Kitchen technique - pineapple and mango

These simple preparations will help you enjoy this luscious fruit all season long.

For a tropical drink: Puree pineapple, low-fat milk, a splash of coconut milk and a handful of ice cubes in a blender until smooth. Add rum if desired.

To Cut a Fresh Pineapple:

Kitchen technique - pineapple1. Cut off the top and bottom of the pineapple with a sharp knife, making a stable flat base.

Kitchen technique - pineapple2. Stand the pineapple upright and remove the skin.

Kitchen technique - pineapple3. Use a paring knife to remove any remaining eyes.

Kitchen technique - pineapple4. Slice the fruit away from the core. Discard core.

Does anyone know how to 'grow' a pineapple, by putting the top in water? I have seen it done but do not know how they started it.

Why discard the core? Puree the core with a little apple juice in your Vita-Mix and you have a delicious smoothie base.
