Buttermilk powder

Buttermilk powder: The buttermilk version of powdered milk. Shelf-stable, it is a convenient alternative to fresh buttermilk in pancakes and baked goods, especially if you hesitate to buy a one-quart carton just to make one recipe. Substitute according to package directions, but for added calcium and protein, replace liquid with low-fat milk instead of water. You can find it in the baking section of most supermarkets.
