After drooling over the image of this recipe for months, I finally made it. I may have set my expectations a bit too high because I was disappointed in the lack of creaminess (though I understand that the point of the recipe is to lighten it up). I'm glad several people enjoy it as is, but I have decided that I will make this in a fuller-fat version. As a splurge meal, I will adapt the traditional mac and cheese by adding Frank's Red Hot, chicken and veggies and perhaps even add some buttered bread crumbs on the top. That way I will ge the flavour and texture that I would have liked from this recipe.
