Holiday Cookie Contest Recipe: Maine Memory Bites

When eaten while sitting by a fire on a snowy evening, these crisp biscotti help recall the Maine of my childhood memories. The crunch of pine needles underfoot, the sweet scent of the woods, a hint of maple syrup, walnuts and blueberries complete the picture. These are perfect for dunking in your favorite hot beverage.

ACTIVE TIME: 15 minutes

TOTAL TIME: 1 1/4 hours

Makes 44 biscotti.

1 1/2 cups graham whole-wheat flour
1/2 cup white whole-wheat flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup pure maple syrup
1 tablespoon plus 1 teaspoon nonfat milk
1/3 cup pasteurized liquid egg substitute, such as Egg Beaters
1/2 teaspoon vanilla extract
3/4 cup coarsely chopped walnuts
1/2 cup dried blueberries

1. Preheat oven to 350°F. Line a large baking sheet with parchment paper or a nonstick baking mat.
2. Blend graham flour, whole-wheat flour, sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Add syrup, milk, egg substitute and vanilla and beat with an electric mixer just until a sticky dough forms. Stir in walnuts and blueberries.
3. Coat hands with flour and turn dough out on a flour-dusted surface. (A sheet of parchment paper works well.) Knead dough 5 or 6 times, making sure hands, surface and dough stay flour-dusted. Cut the dough in half and form each piece into a flattened log about 12 inches by 2 inches. Place both on the prepared baking, 3 inches apart.
4. Bake for 35 minutes. Let cool on the baking sheets on a wire rack for 10 minutes. Reduce oven to 300°.
5. Transfer the cooled logs to a cutting board and slice crosswise into 1/2-inch-thick slices. Place slices cut side down on the lined baking sheet. Bake for 6 minutes. Flip biscotti to other side and bake for another 6 minutes. Transfer to a wire rack to cool completely.

NUTRITIONAL INFORMATION: Per cookie: 60 calories; 1 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 10 g carbohydrate; 1 g protein; 1 g fiber; 38 mg sodium; 21 mg potassium.

More biscotti....ditto my comments as with the other two bite chocolate cookies. What a disappointment!

No disrespect intended, but I am wondering of the previous comment poster even made and tried this cookie before she deemed it a disapointment? I have tried this cookie and it was delicious. Light, sweet, and crunchy - I could not believe such a tasty treat was so healthy! Fabulous recipe!

I made these today, and they were a great success. Because I didn't have dried blueberries, I used dried cherries, used a bit less of the walnuts and put in a little bittersweet mini chocolate chips. These biscotti are a revelation with no butter or oil added!
