Barilla Whole Grain Rotini Salad with Avocado, Tomato and Mozzarella
Serves 4-6
Capture the joy of preparing this healthy pasta dish for family and friends this summer!
- 1 box BARILLAWhole Grain Rotini
2 cups (5 medium) plum tomatoes, diced 3 cups (3 whole) California Hass Avocados, diced
- 2 1⁄2cups (about 16 ounces) fresh mozzarella balls,
small-sized, halved 1/2 cup fresh basil, torn 1/3 cup plus extra extra virgin olive oil Salt and freshly ground black pepper to taste
- BRING a large pot of salted water to a boil.
- COMBINE tomatoes, avocados, mozzarella, basil, and olive oil in a large bowl. Season with salt and pepper. Let mixture marinate for 20-30 minutes.
- COOK pasta 1 minute under lowest cook time on package. Drain and pour onto a flat surface. Drizzle with a small amount of oil and let cool.
- ADD cooled pasta to ingredients in bowl; toss and serve.
