Unfortunately for my husband, I wasn’t born with a sweet tooth—I was born with what I like to call a salty-fatty tooth (mmm, chips...) But I do like to make him sweet treats every once in a while. We’re trying to save money this year, so I decided that in lieu of a gift for Valentine’s Day, I’d give him what he really wants.

In its classic form, chicken parm (short for Parmesan, but of course you knew that) is a dish you order at a family-style Italian restaurant when you want a big piece of chicken breast fried, coated in buttery, cheesy breadcrumbs, topped with melted mozzarella and served with a pile of pasta and tomato sauce and a solid dusting of Parmesan cheese. To replicate this dish at home, you’d go through the process of dredging and breading the chicken breasts, then getting them crispy and golden in a frying pan with plenty of oil, followed by baking them in the oven topped with gooey cheese—not to mention the homemade sauce. So delicious. So much work.

The scene: My kitchen. The time: Tonight, about 30 minutes before everyone melts down from starvation. The options: Join in the meltdown; scrounge around for enough money to order pizza; or do something special with those innocent-looking potatoes in the pantry. I bought them recently, thinking it would be a good idea to have potatoes in the house, just in case. And in this case, I can turn them into Asparagus & Ham Stuffed Potatoes in 30 minutes and turn dinner drama into a satisfying family meal. (At less than $3 per serving, it’s cheaper than pizza too.)

Confession time: I’m a brownie snob. For years I’ve turned up my nose at “blondies.” (OK, maybe there’s a little “brunettes vs. blondes” thing going on too.) Given the choice, I’d always pick a fudgy brownie over a wan beige blondie more defined by its lack of chocolate than the presence of any particular identity of its own.
