After work most nights you'll find me in the kitchen. I pour a glass of wine, get organized and start cooking. I listen to the radio. Or chat on the phone. I'm not in a hurry. I buzz along at my own pace, winding down from the day.

But I've got two things going for me: no kids and a husband who loves to eat late. My laid-back take on cooking most nights is not the norm. The editors here at EatingWell tell me about it all the time. Take our senior food editor, Carolyn Malcoun. She gets home by 6 and the whole family is sitting down to eat by 6:30 every night. She's a speedy cook, plus she's got some tactics, like meal planning and shopping on the weekends, that help her get it done.

Lately I’m trying to appreciate and cultivate simple pleasures in my daily routine—little things that bring me joy (and reduce my stress levels). Things like: sitting at the table at mealtime, taking a walk with my family after work, having baked potatoes for dinner. Baked potatoes!

The ultimate comfort food—starchy and warm and filling—baked potatoes are the perfect antidote to a chilly autumn night. It’s amazing how something so wholesome, so available and inexpensive could be so delicious too. But it’s true.

My daughter is only 4, so we have another year until she starts school. But I still pack her lunch for daycare every day. One of the easiest ways to make sure she has a healthy lunch is to use a Japanese-style bento box.

Do you remember the Easy-Bake Oven? This pink countertop masterpiece was a gift from my mom on my 6th birthday. As I ripped open the chocolate cake mix and stirred it together with a matching small pink spatula, my eyes lit up at the wonder of this gooey batter turning into a dessert. When the timer went off and we used the small pizza paddle-looking tool to pull out the cake I thought, "This is it. This is what I want to do forever." My mom's gift not only provided a sweet treat but it spurred my love of cooking. While the Easy-Bake Oven cake wasn't the healthiest option, my mom and I went on to take Asian cooking classes together and by high school I was making dinners loaded with vegetables and lean proteins for my parents every night.
