I put my heart and soul into cooking the Thanksgiving meal, and in the days afterward the last place I want to be is in the kitchen. I know I’ll still have to eat, but I’m going to give myself a break with some easy, ultra-quick dinner recipes. These recipes take only 20 minutes from start to finish and use ingredients that I almost always have, like bread, eggs and tuna fish. (I just might need to make a quick trip to the grocery store for some vegetables.) Dinner doesn’t get much easier than that.

Let’s face it, during the holidays most of our eating rules—mine included—fall by the wayside as we’re enticed by delicious holiday drinks and beautiful food spreads at parties. (Find healthy, holiday cocktail and appetizer recipes here.)

My fiancé, Colin, and I do tons of road-tripping during the holidays. To save time and money, we snack in the car rather than stop for a meal along the way. Gas stations don’t have many healthy options, and if we’re not careful we end up eating lots of junk food like candy, soda and salty chips. So to stay healthy on the road, we never leave home without two big containers of water—one for each of us—and a bag full of quick healthy snacks to keep us going the whole car-ride long.read full post »
Even though my son is only 8 months old, I’m offering him a wide variety of foods and spices (curry!) with the hope that he’ll be an adventurous eater. But after I recently read that boys and girls prefer different foods, I realized there may be more influencing kids' food preferences than what we put on their plates. According to a new study of kids in grades 3-12 published in the Journal of School Health, girls preferred fruit and vegetables, while boys liked meat, fish and poultry. (Don’t worry, tastes changed and expanded as the kids got older.)

I’ve been an on-and-off vegetarian since I was a teenager and the one holiday I’ve always dreaded most is Thanksgiving. I mean, isn’t it all about the turkey? While I get stuck eating starchy sides and dry stuffing, everyone else gets the main attraction, plus gravy. There’s nothing like Thanksgiving to make a vegetarian feel like an outcast.
