Over the years we’ve all heard some nutrition information and advice that seemed so black-and-white it was hard to imagine it would ever change. I think one of those bits of information is cutting back on saturated fat to improve your heart’s health. For years research has suggested that keeping a cap on saturated fats helps reduce risk of heart disease primarily by lowering “bad” LDL cholesterol, which can lead to plaque buildup in arteries.

I like to make salsa at home—it’s simple and I can make it just as I like it: red or green, hot or mild, lots of or little cilantro, with a little fruit thrown in, or simple tomato like this Salsa Rojo recipe. I’ve been cooking dinners from our new book EatingWell 500 Calorie Dinners five nights a week for a few weeks now as part of our 500-Calorie Dinner challenge. I’ve also talked with people about the book a lot, and one of the questions that keeps coming up is about cost. People wonder (or perhaps assume) that if you’re going to cook these great dinners every night it’s going to cost a lot of money.
