I consider myself lucky to live in one of the most beautiful states in the U.S.—Vermont. One major benefit of living in the Green Mountain State is having an endless number of day hikes within an hour or so drive. My husband and I try to get out every weekend to tackle a different mountain. Inevitably, halfway down the trail we start talking about the juicy burgers and ice-cold beers we’re craving after our day out in the woods.

I like food from all corners of the planet, but on Independence Day, I want All-American 4th of July recipes. I’m talking about foods that stick to your ribs, like juicy cheeseburgers, creamy pasta salads and sticky-sweet desserts—all washed down with a cold beer.
When I was a kid, I could really pack that kind of food away (minus the beer), but today I have to be a little more careful. A menu like that can have upwards of 1,150 calories—a number my summer wardrobe can’t afford. I was happy that Penelope Slade-Sawyer, Deputy Assistant Secretary for Health, U.S. Department of Health and Human Services (HHS), openly recognized the severity of America’s obesity epidemic when she said, “Obesity is the single greatest threat to public health in this century,” as she released a new report by 13 of the country’s top scientists last week. When we were kids, you were very grateful for the food on your plate—whatever it might be—and you finished every last morsel thank you very much.
