My husband and I are fairly active people, but we’re always looking for more ways to shed a few pounds. (Who isn’t, right?) So when I read that adding more fiber to your diet can help you lose weight, I started to think about where I could sneak in some extra fiber during the day.
We already get a decent amount of fiber at breakfast and dinner, so lunch seemed like a good experiment. Especially when I realized I could turn some leftover dinner ingredients into high-fiber lunches.

I found out that as I’m loading up on calories (yum!) my body is being forced into overdrive as it tries to undo the damage done by the harmful free radicals produced as I digest food. I put my heart and soul into cooking the Thanksgiving meal, and in the days afterward the last place I want to be is in the kitchen. I know I’ll still have to eat, but I’m going to give myself a break with some easy, ultra-quick dinner recipes. These recipes take only 20 minutes from start to finish and use ingredients that I almost always have, like bread, eggs and tuna fish. (I just might need to make a quick trip to the grocery store for some vegetables.) Dinner doesn’t get much easier than that.
Here are some of my favorite easy post-holiday dinner recipes:
