Since it’s spring, I’m doing all the traditional spring things: I’ve packed up my winter sweaters and I’m digging into spring cleaning. But I haven’t put away my slow cooker. Since it’s still light when I get home from work, I want to take a walk with my son and husband or play with our dog in the yard, not spend a half hour or more making dinner. Slow cooker recipes that practically cook themselves are my answer to having it all.
So I’m still cranking away on my slow-cooker routine:

I can’t wait to dye Easter eggs with my son for the first time this year. I know he’s really going to enjoy it because, at 1 year old, he’s really into dipping things. I like dyeing Easter eggs for two reasons: exercising artistic flair with my egg decoration and having leftover hard-boiled eggs. Hard-boiling eggs is quite possibly one of the easiest things to cook, but I still feel like it’s a treat to have them around for egg salad or to chop up and put in a green salad. I think we all have one of these friends: she’s thin and fit, yet when we go out to eat she packs away more food than a linebacker. Burger, fries and a shake? No problem. I’m often tempted to keep up: if she can eat it and look that good, I can too, right? (Look better in 4 weeks with our super-easy plan to slim down.)

Since I’ve become a mom, it’s a challenge for me to get enough sleep. It’s become harder for me to fall asleep because I’m thinking about work, the baby, all the stuff that needs to be done around the house, what to make for dinner the next night...and the list goes on. (At least I’ve got a handle on the dinner thing—I either make one of these cheap, 30-minute dinner recipes or make a super-easy meal in my slow cooker.)

When I watch Apolo Ohno skate I can’t help but hold my breath and sit on the edge of the couch—it’s so exciting! He nearly always seems to pull out ahead from the back of the pack to win.
So what fuels his incredible speed and skill? Lots of healthy foods. I got the chance to interview the speed skater and 7-time-and-counting Olympic medalist (who loves to cook, by the way) and ask him about what he eats to win for EatingWell.
