Mmm... Stuffed mushrooms:) garlic, diced onion, Parmesan, mozzarella, cream cheese, oregano, breadcrumbs, and sometimes spinach!

I always think of comfort foods whenever I plan to serve a meal to non-vegetarians. There are many meatless lasagnas to choose from, but my favorite meal is a mushroom loaf that always receives compliments. I use portobello and button mushrooms, finely chopped walnuts and cooked brown rice, Marscapone cheese, some fine breadcrumbs and a layer of zucchini ribbons sandwiching shredded carrots down the middle of the loaf. Also, a variety of mild spices. I top this with a wonderful tomato sauce made of slow roasted tomatoes and celeriac and a few other ingredients. This is served with a nice salad, another vegetable side dish, and potatoes mashed with the mushroom juices, a little butter and walnut oil, and shaved Parmesan. A friend of mine, who is critical about vegetarian cuisine, came over for supper one night. He abhors the thought of eating tofu, and when I told him about the mushroom loaf, he said it was fine, but that there better not be tofu in it! When the meal was done, I served a delicious and rich chocolate pudding. He told me he might convert to some vegetarian recipes, since the meal was so good, but I better never expect him to eat tofu! I laughed and stated "What do you think the chocolate pudding was made of?"

Penne pasta with shrimp. Cook pasta. Saute shrimp. Sauce of roma tomatoes, onion, garlic, cracked pepper, salt, olive oil. Serve with crusty bread and a salad with homemade dressing.

A super simple tomato sauce with pasta and my boyfriend's amazing salads and homemade dressing. The pasta sauce is so light and fresh tasting, no one ever misses the meat!!
