I'm having fun trying different meatless dishes, my favorite so far was a chipotle roasted butternut squash with black bean and rice bowl. Looking forward to belaying with a CSA this summer!

There are so many reasons but my top one is cutting calories to stay leaner!

We try to eliminate meat for a variety of reasons, the main one right now is financial. Cutting down on meat can save a bundle at the grocery store, but additionally we want to improve the environment as much as possible and reducing meat consumption also helps to reduce greenhouse gases created by the livestock industry. The more we cut down the more humanely I hope to see animals treated as well. The horrible conditions and lives the animals have is the very reason we buy from our local farmer who we know treats them humanely and not just as dollar signs.

My main purpose for not eating meat is that I don't think God meant for us to consume another living creature. I think everything that is meant for us to eat can be grown. There is an epidemic of obesity and heart disease I believe that is mainly due to the consumption of eating flesh. I've began to make more conscious choices of what I put into my body and eat more plant based foods. I ultimately want to become a vegan and teach my entire family about making more healthy choices.

There are so many important reasons to cut back on meat consumption, but for me, the number one reason is for the sake of the health of my loved ones. I'm the primary cook in my household, and I feel a responsibility to provide the most nutritious meals as possible. There are multiple studies that reveal the benefits of plant based diets over diets based around meat as the primary protein. The sad truth is that most of the time, we cannot be sure what hormones, drugs or living conditions farm animals endure during their lives. The safest, most delicious, and guaranteed cruelty-free solution to this mystery is to eat the tasty fruits, vegetables, legumes and grains that the Earth has given us! It's fun to experiment with new ingredients and recipes that are just as satisfying as they are nourishing!

We're cutting back on meat for a couple reasons..
*not knowing where the meat comes from
* we feel SOOO much better when we eat veggies
