When I started doing research for our latest book, EatingWell on a Budget, I was blown away by the stats I came across. The one that sums it all up for me: a third of adults and 16 percent of children in the U.S. are obese and the highest obesity rates are associated with the lowest incomes and education levels, according to a survey by the Centers for Disease Control and Prevention. Adam Drewnowski, Ph.D., professor of epidemiology at the University of Washington, says, “Simply put, fats and sweets cost less, whereas many healthier foods cost more.” For many Americans, cooking healthy food on a budget seems impossible.

I swim a couple mornings a week and recently I’ve had to share a lane at the gym pool (which almost never happens). I asked one of the other regular swimmers next to me why it was so crowded. Swimsuit season. (Click here for our easy, 4-week weight-loss meal plan to slim down in time for summer.)

Just like those resolutions in January, the anticipation of going out in public in a bathing suit is enough to get many of us flocking to the gym to drop pounds.

I’ve been cooking dinners from our new book EatingWell 500 Calorie Dinners five nights a week for a few weeks now as part of our 500-Calorie Dinner challenge. I’ve also talked with people about the book a lot, and one of the questions that keeps coming up is about cost. People wonder (or perhaps assume) that if you’re going to cook these great dinners every night it’s going to cost a lot of money.

I’m not sure why people think it’s going to be expensive...because in fact many of the recipes in the book cost less than $3 a serving. Plus one of the keys to losing weight can also help...

For the past few weeks I’ve been challenging myself to eat 500-calorie dinners 5 nights a week from our new book EatingWell 500-Calorie Dinners. I have a small confession to make: I haven’t been sticking to the menus...exactly. I have been keeping my dinners to 500 calories, but I’ve also been making a few substitutions here and there.
