I’m going to try and take “Fat Tuesday” a little less literally this year with a healthier approach to my Mardi Gras recipes and menu. Of course I’m going to stick to the traditional favorites, but for my party menu I’m going to focus on healthier versions that stay true to those delicious Cajun flavors I love. Maybe I’ll even score a few extra beads for my efforts.

If you’re like me, both time and money are tight these days. I would love to spend all afternoon cooking an elaborate meal, but that’s not reality. I love pork, and boneless pork chops are my pick of the pig when it comes to quick and easy dinners. Plus at about $3.50 per pound, they make great budget-friendly meals. Perfect for a quick and tasty weeknight dinner that won’t break the bank.
For example, Pork Chops with Orange & Fennel Salad are a terrific antidote to a dreary winter day. Serve them with crusty whole-grain bread or brown rice.

There are plenty of people in Vermont who relish the freezing temperatures and snow that come during the heart of winter. I’m not one. While my friends are out skiing, I’m in the kitchen, dressed in my most comfortable sweatshirt, looking for new dinner recipes that are low in calories, but big in flavor.

I couldn’t survive the winter without soup. It makes the cold dark days of winter much more tolerable. These days, I like to make soup at least once a week, if not more. That may seem a little monotonous, but in my world, there’s a soup to suit every occasion. Got the sniffles? Chicken noodle soup has got the cure. Well, maybe that’s a stretch, but it sure makes you feel better. Nothing is more satisfying than a creamy turkey and wild rice soup after a long day skiing. So here are a few of my favorite soup recipes. Prepare to be satisfied.

This year I’m going to be one of well over 1 billion people who will celebrate the start of the Chinese New Year on January 26. I’m throwing a dinner party to celebrate—it’s a great excuse to try some healthy Chinese recipes and share great food with friends.
