During the Super Bowl, while my husband is in front of the television yelling about bad play calls, I’ll be in the kitchen enjoying some of my favorite Super Bowl recipes. I’m going to make chips and dips, onion rings, jalapeño poppers and chicken wings just to name a few. Some of our recipes for these favorite snacks use an easy, mess free oven-fry technique that gives food a crispy golden crust and moist interior. It tastes like fried food, but it’s better for you. Last week was super-busy for me. I had bills to pay, people to see and a very cluttered house to clean. I never felt like I could get ahead, let alone give myself time to fix dinner. When I need to eat and get on to something else, I find it hard not to reach for the phone and just order pizza for delivery. But in the time it takes me to order and actually get the pie, I could make an ultra-quick recipe (and I also wouldn’t feel guilty for ordering pizza). It’s not hard to make dinner in 20 minutes—especially if you focus your meal around quick-cooking chicken.

As part of my pledge to eat healthier this year, I’ve decided to cut back a little on my meat consumption—a tall order for such a carnivore. I dug through my recipes and pulled out some vegetarian recipes that will help me make eating meatless delicious. Spinach-&-Cheese-Stuffed Portobellos is a favorite of mine because the oven-roasted mushroom caps come out juicy and tender, almost meaty, so I don’t feel like I’m missing anything. So it’s been a few days, and so far, I’m sticking to my New Year’s resolution to eat better. It’s around this time when I usually sabotage my efforts by giving myself a “reward,” in the form of a tasty treat, for staying on track. That usually involves a decadent chocolate dessert that doesn’t exactly fit under the healthy-eating umbrella.
