Dear Hilary, I am from Russia and we cook Eggplant in the oven and be piled skin after is cooks
cut and eat with Onion, garlic and tomato's with little olive oil. I did for so many years it very good.

First of all, someone who loves making and eating eggplants should be writing this article. Not someone who only know one way of making eggplant. There is tons of way to make eggplant.
1. Eggplant lasagna with mozzarella cheese, parmesan cheese, tomato sauce, basil, salt paper, layered over and over. Bake at 425 for about 30 min.
2. Slice eggplant into thin round slices and dip them into egg and flower. Cook it on the pan when the eggplant is cooled mix mayo, fresh garlic and spread it on top of cooked eggplant top it with a fresh thin sliced tomato. Refrigerate for 20 min and serve
3. There a variety of soups and stews that you can make from an eggplant as well.
