Oven roasting seems to work for me. Could never get my family to eat Brussels sprouts, sweet potatoes or cauliflower. Add olive oil, onions, garlic and rosemary, oregano or basil and roast at 450 and they eat them up.
That's my trick.

Use spices and try grilling. Veggies are great grilled.

Spices and grilling. Especially veggies. I have started grilling all sorts of vegetables,some I would have never thought of grilling years ago. For example brussles sprouts tossed in a little olive oil and some pepper have a vastly different taste from the boiled version. Much tastier.

Every spice there is has no calories. If food doesn't taste good, it is the cooks fault, not that it's healthful.
