Penelope asks: What are your tips for making meatless taste great?


None of those is really good for you, especially the gluten.

I've been vegetarian for nearly 18 years, and I rarely use tempeh or seitan, and really don't use that much tofu, either. It's just not that hard to get adequate protein with beans, dairy, grains and nuts.

Thanks, it's about time! I have been meatless most of my life...i am 60 years old now, and never miss the childhood meals that i was fed by my Italian relatives. So, that proves that the body has a mind of its own doesn't it?

You don't mention the very, very high sodium content of Seitan products. Why not? Surely it's a serious nutrition issue?

Beans are our major source of protein at dinner time. I especially like to use lentils in salads and soups because they are so high in protein and easy to cook. Seasonings like those used in Indian cuisine, garlic, onions, fresh herbs and the vegetables themselves all taste great. It doesn't take much to make a meatless meal yummy.
