I've read and searched recipes to can hot peppers and jalapeños. I want these jars of peppers to last long time on a shelf. Your recipes sound tempting but would rather can peppers/jalapeños for long term. You mentioned you got a canning recipes also. Are they as easy as the ones you have above? Or do you have a canning book available?
