How to pack a picnic that won't pack pounds

Hilary asks: What do you like to pack for a picnic?


I made a healthy version of potato salad using shredded carrots, broccoli, yellow peppers, onions and celery in addition to the potatoes. Because I used more veggies and less potatoes, there were less carbs/calories. I used low fat mayo, a little mustard, some low fat yogurt and parsley to season it. Then to add a little interest, I tossed in some small cubes of reduced fat cheese. It was very good and a healthier change for a picnic.
