How to make perfect gravy

Hello, Michelle. I'm a physician and food writer, EW subscriber since the original magazine appeared in the dark ages, and reader of the EW blogs. I love your approach to gravy, but wonder if you've ever tried the ziplock bag degreasing method which I demonstrate in a video on my new healthy cooking website http://www.adoctorskitchen.com/archives/degreasing-liquids . I believe it's faster and more effective than freezing and scraping.
