I've been making cornbread with kernels and cottage cheese for years -- sorry, not an Eating Well recipe -- delicious, easy, lower fat and lower sugar.

Made this last night. It was very good. The creamed corn made it really moist, it was a bit heavy or dense but still yummy. You can triple or quadruple the dry ingredients and store that. Then you just scoop out two cups and add the wet ingredients.

I guess I'm stupid, but I thought I would find a recipe to make my own "Cornbread Mix" to have on hand and to then use it as I wanted it. I don't seem to see that here.
