How to make crispy latkes lighter

Just fry them in olive oil!

I parboil the potatos for about 10 minutes. Then I shred. This makes the frying time shorter and uses less oil.

If you use an electric fry pan the oil stays at a constant heat therefore the pancakes don't absorb all that oil. You should still put them on paper towels.

Since the reason Jews eat latkes on Hanukah is to commemorate the miracle of the oil, if you bake the latkes, you are basically missing the whole point.
That being said, I like the parboil idea though I never did it. I make cabbage latkes which I "fry" in a non-stick pan with minimal oil.
Zuchinni-Potato Latkes also could add some nutrients.
