How to Make Creamy Mashed Potatoes (without the Cream)

Matthew asks: Do you have a trick for slimming down mashed potatoes?


I use 1/3 fat free cream cheese instead of butter, add a little skim milk, 1/2 salt and pepper to mashed potatoe and your good to go. I use red potatoes and leave some of the skin on for more added flavor.
