Frito pie made healthier

Matthew asks: How do you keep Mexican food healthy?

This was really good. I didn't have a zuchinni so I used a large can of seasoned greens, rised really well and drained. I also decreased the chili powder to 3 tbsps and added an extra cup of beef broth, as it was too hot for my family at my first taste test. We loved it and it made a huge pot :)
