Fresh vs. canned vs. frozen: which is better?

Hilary asks: Which canned or frozen fruits and vegetables do you often cook with?


Frozen spinach is fine if it's being cooked into something like soup or vegetable lasagna, otherwise yes, fresh is the way to go.

I still have bad memories of the way my mom would cook spinach. Drop the frozen block of spinach into a pan with some boiling water, cook it to death, then serve the resulting green slime with a lemon wedge and make the us poor kids sit at the table until it was gone, not even the dog would eat the stuff.

I didn't eat spinach for decades because of that... and still have fun giving Mom a hard time over it!

I've eaten frozen spinach, it is incredibly gross, I would no more eat frozen spinach than I would eat frozen lettuce.

Frozen broccoli is much easier on the stomach than fresh as well.

This is a wonderful article! I cannot count the number of times I go back and forth between fresh lemon juice and bottled or frozen vegetables and fresh vegetables. Some of these really shocked me. I really like how you separated the different items and showed the comparison and the clear winner. This is more helpful than I can explain! Thank you!
