When I make home made ice cream. How do I keep it from freezing solid?

I too have cravings for ice cream especially on hot days. Living in cold weather states, certain fruits are cheap at different times of the year (raspberries, strawberries and blue berries to name a few) so I freeze them. One day I decided to try and mix them in the blender with some low fat and fat free milk to make a “shake” and found this worked very well. I can make it as thick as I want, and never add sugar since the fruit is sweet enough for me. The best is frozen bananas which by themselves are a treat. If you must have some fat, try a little half and half or full fat milk. So when the craving hits, I blend up some froze fruit and save lots of calories and fat!!

frozen desserts you can buy now made from soy milk, almond milk, rice milk, coconut milk and even hemp milk are all delicious, and soo much better for you.. most of them have a fraction of the saturated fat that traditional dairy ice creams have, and in most cases a lot less calories.. a lot of them are sweetened with less refined sugars also, like agave nectar and brown rice syrup.. i highly suggest looking for them and giving them a try.. some of my favorite brands are Purely Decadent and the Almond Dream and Rice Dream lines
