My family has kept the butter out. My folks are 93 and 88 and have never gotten sick from doing this. We do NOT eat nasty margarine. Leaving the butter out works for them, works for me.

Butter does NOT spoil easily when left out of the fridge. My parents are 88 and 93 and have been leaving their butter out all their life. If it's good for them, it's good for me. I sometimes put mine in the fridge simply because our kitchen gets pretty warm if we use the oven in warm weather and I don't want messy melted butter. Otherwise I leave it out and we have never gotten sick!

I keep crisco shortening in the fridge because my friend told me it makes better pie crust that way.

Any oil-containing foods should be stored in the fridge, including cereals, grains, vitamins, flour and nuts (as you mentioned), and cooking oil.
