I use the leanest turkey & beef, chopped onions & oatmeal (never bread crumbs). It's not only tasty but so good for you.

I use a can of diced tomatoes with Italian seasonings or chilli seasonings. The tomatoes give great flavor. Also, using rolled oats instead of bread crumbs gives more fiber.

I love all the comments so far and will try them myself. I use old fashioned oats as the filler and find this makes a dense and slightly sweet loaf,

Instead of using ketchup or other condiments, i add salsa sauce to my meatloaf. Fresh garlic
instead of he powder, and 1/2 pkg. french onion soup mix. Couple dashes of worstershire sauce,
and can use HP Sauce or Heinz 57 sauce.
I find this turns out quite moist, and makes excellent sandwiches cut thin.

I've added reconstituted sun-dried tomatoes, and then I made a balsamic-ketchup glaze for the top of the meatloaf. It was my Italian-inspired meatloaf version. We love the classic but lean and healthy version, and I've also made it using salsa and Latin-flavored spices. The possibilties are endless!

To take every leftover vegetable I have, throw it in the cuisinart and then saute until it carmelizes. Add it to beef, turkey, pork or any combination and it makes a wonderful meatloaf.

I use parsley, sage, garlic, thyme and grated parmesean cheese. Delicious
