4 simple one-skillet suppers

Hilary asks: Do you have a cast iron skillet? What do you cook in it?


I make chilli, spagetti sauce and beef stew in my trusty cast iron skillet!

I had one but gave it away. I could never master the art of seasoning it.

I use my cast iron skillet for most of my cooking, from breakfast bacon and eggs to pineapple upside down cake. My skillet is probably about 100 yrs old handed down 3 generations. It's always been an easy clean up the original non stick pan.

I have several cast iron pans, one of my favorite is my round flat iron pan that cooks wonderful corn cakes, pancakes or grilled cheese sandwiches.

I brown two pork or butt chops put some salt and pepper on them and garlic powder, cover with tomato juice and onions and aluminum foil and bake in the oven for about an hour. Taking foil off to brown.
Serve with rice.

Great Question! According to Mark Kelly from Lodge Manufacturing, enamel coated cast iron pans don't perform as well over high heats - the enamel can crack and scratch. That being said, an enamel coated cast iron pan would be fine in these recipes - none of them require that you really crank the heat! According to Mark, even pans that have scratches or cracks in the enamel are still okay use. - Hilary Meyer
