I use Greek yogurt as a topping for baked potatoes. Use olive oil for a crispy peel that is edible..
Place in a paper towel or better yet, a coffee filter set in a strainer.
Cover and store in refrigerator overnight
What you end up with is a type of potted cheese, something like sour cream.
Top with chopped scallions.

Replace bread crumbs with oatmeal in meatloaf.Uuse applesauce to replace oil in cake mix cakes.Add a little pumpkin purée or butternut squash purée to tomato sauce.

I noticed you suggested using low fat milk and flour, to reduce fat and calories in creamy foods, such as Alfredo and mac and cheese. I am curious as to how this is better? In my opinion this would be like eating a bucket of paste, that would stick in the intestines and clog up the pipes. I had heard of a biggest loser contestant making an Alfredo sauce with Greek yogurt. I would like to hear your thoughts on this.

When I saute veggies, I use a comparable amount of vegetable broth instead of the oil or butter recipes call for.
