All meat, fish, seafood, and poultry should be rinsed and patted dry. There is bacteria on it. Also, toss the paper towel you dried the meat with in the trash immediately; don't set it down on the countertop before disposing as it will then contaminate the countertop. Modern faucets aerate the water coming out of the spigot and therefore the (contaminated) water does not splash all over the kitchen when holding meat under running water. (Also, most people don't eat out of the sink or lick their sinks, and do thoroughly clean their sinks on a regular basis. So if your sink has dangerous bacterira in it after rinsing meat, that's a good thing as you will be eating less of it in cooked form.)

Using same fried oil for next dish...
I got to know by reading the article on that there could be some dangerous health issues if someone uses used refined oil.
