Corn is NOT a vegetable. It is a grain. Corn is the most sugary, starchy, empty grain there is.
You’re better off with white rice. An occasional piece of corn on the cob is fine, but overall, it should not be a part of your diet if you want to "Eat Well".

off the cob first. now i make masa harina from scratch. form small patties and eat a variety of ways and foods. am vegetarian and off wheat mostly so am learning ways to use corn. caan be eaten at anytime or meal.
