In the phils the common way would be with rice. Sardines in tomato sauce are sauteed with garlic and onion with a dash of pepper. you can add chopped vegetables, like green beans, or julliened cabbage or bokchoy.

In my region (Boston, MA) they sell Beach Cliff sardines canned in water. They're the only brand I've found that has sardines canned in water rather than oil, so I get those. But, I don't think they're Pacific sardines. I'm pretty sure they're fished in the North Atlantic. Does it make a lot of difference whether they're Pacific or North Atlantic? I eat sardines all the time because they're reasonably affordable, but I'm afraid if I have to go to the Whole Foods fish monger to get Pacific wild-caught sardines and cook them up myself -- well, it's probably just not going to happen.

Can I still feel good about eating my Northeast sardines (not sure if they're wild-caught, either) ??

With a fork--straight from the can, or on brown (Hovis) bread-&-butter.

Just right out of the can!!! I have never tried them in a recipe - my grandpa turned me on to eating sardines when was very young, and I remember sitting in their kitchen with some crackers, cheese, and and an open can. I think that's the best way for someone to get to know these yummy little flavor powerhouses!

I like them plain, right out of the can. I used to eat a lot of these when I was young and have kind of let my taste for them fall by the wayside. They are very good. I will have to get a can and start eating them again. I used to eat the skin on with bones but I think I would like the skinless and boneless better.
