1. Place canned sardines, along with the olive oil in which they were packed, into a bowl. Add fennel seeds, some currants, and (if desired) sprinkle some pine nuts into the mix. So delicious! You can eat them just like that, or eat them with crackers.
2. Bake a white potato or a sweet potato (my favorite) in the microwave. Cut the potato up into bite size pieces and place the pieces in a small bowl. Open your can of sardines and dump everything on top of the potato. The baked potato heats the sardines very slightly, and this seems to bring out their flavor. Delicious!

Ways I like sardines:
Saute onions in a little coconut oil until they are just lightly browned. Pour beaten eggs with tiny amount of water added over onions. When eggs are almost done (actually they are scrambled eggs) stir in a can of chopped up sardines. I like the ones with Louisiana hot sauce but they are all good.
I also like them prepared exactly as above only instead of eggs, saute vegetables (frozen or fresh and almost any kind you like). When they are ready to eat, stir in a chopped up can of sardines. Season with salt, pepper, curry powder, herbs, whatever you like.

Salads are most healthy and best diet option meals one can have. I always prefer lots of veggies in my salad. And the sardines are also a good ingredient to add in the salads.
