Corn has certainly had a bad rap and you still want to get it as fresh as possible or frozen to reduce exposure to mold toxins that are very common with it. Check out its nutrition profile at NutritionData, its very nutritious (43%B1, 53% magnesium, 53%B6 and 24%Zinc per cup for example)

The whole thing with salt and butter being bad is nonsense though. There is absolutely no genuine clinical studies that support such claims. Butter raises HDL and nourishes the brain and salt is made up a two vital nutrients. Chloride is essential for the production of stomach acid and a low salt diet actually causes digestive problems. There is absolutely no real science behind these claims, just studies involving very sketchy and unreliable sources and no clinical, double-blind studies.

how does corn have any health benefits, when it comes out the same way as it came in?

Yes, I think corn is healthy, especially the yellow variety. It's not as healthy as some of the vegetables, especially dark green vegetables, or maybe some of the fruits such as tomatoes. Incidentally, there seems to be some confusion about whether corn is a grain or a vegetable. Generally, vegetables are the stems (celery), leaves (Romain lettuce), roots (potatoes), and such parts of the plant. Fruits are the mature ovaries of flowering plants. Grains are the fruits of grasses. So, technically corn is the fruit of a grass and is therefore a grain. It's true that grocery stores do not abide by these classifications, but they're more concerned with how things are prepared for eating.
