I seldom bake anymore which is very difficult being a retired Home Economist. I checked with my doctor and she suggested limiting the use of coconut oil use because it is "fattening" as she put it and she is of Indian/Pakastani descent. Lately I have been substituting half of the fat with coconut oil and using Smart Balance for the rest when making homemade healthy muffins which I eat for breakfast. Last week I made Hummingbird muffins with crushed pineapple, toasted coconut, banana and raisins which I eat every other day. I am allergic to eggs and have been sensitive to dairy, so I frequently use soy yogurt in place of eggs, but for some strange reason it has been unavailable in the stores lately. I usually share my muffins with either my daughter or sister and have to take into their diet considerations which also dictates my "creative" baking.

I still use butter on sandwiches, but, I use only coconut oil to fry my eggs. I believe I am healthier by using it to fry with and it has a higher heat point so it doesn't get toxic like olive oil does.

No! Iam scared to do do. I heard in the past coconut oil was really bad for you. They even stopped using it at theaters where they used it for popping our pop corn . If you ask me., there is too many different reports on how good or how bad some foods are for us. I need to read something positive. What us really good.. I don't know what or who to trust when it comes to what to eat that wont hurt us. Same thing with eggs. I love eggs! But one hears so many different warnings about how is bad for us and the cholesterol issues . I don't know what's what anymore.

Only in a peach cobbler. I reduced the butter and added less coconut oil as a substitute. It is awesome. I reduced the sugar also. It was AWESOME! Peaches have never tasted so good.

But remember that canola oil is likely to be GMO. Olive oil is the best way to go.

I only use coconut oil, about a tablespoon in an occasional smoothie. I don't think people actually substitute it as an exchange for using butter. I don't use butter or margarine much either, no need really. If I cook with oil, I use about 2 -4 tablespoons of Olive Oil. The comparison seems somewhat skewed because they way you presented it, IMO, is that you would be using Coconut Oil, in place of butter. That being said, butter would taste better on corn on the cob than coconut oil! Coconut Oil doesn't have much flavor, pretty bland.

Coconut oil is a good alternative to using olive oil for high temp cooking, as olive oil has a lower smoke point and can burn. Being from Wisconsin, I will never give up on butter, but you can't use it for everything. I think it's a good idea to have a variety of options. Coconut oil may not be a magic bullet, but I think it's still a better choice in some cases.
