Eat More Vegetables Challenge Day 2: Sneak More Veggies into Favorite Family Meals

There are plenty of ways to slip a few extra vegetables into your meals without changing the flavor and putting off picky eaters. Here are a few ideas:

You can tuck spinach or broccoli into creamy dishes like stuffed shells or macaroni and cheese or incorporate mild vegetables into a beloved dish where they’ll be dominated by other flavors.

Finely shred or grate veggies like carrots or zucchini into meatloaf, pasta dishes or spaghetti sauce to add both nutrients and flavor to meals.

Make already lycopene-rich tomato sauce even healthier by stirring in canned unseasoned pumpkin puree. The pumpkin puree adds fiber and beta carotene, but has a mild flavor and creamy texture—so no one will be the wiser. Then pile it on pasta, pizza or casseroles for an extra dose of nutrients.
