I quit meat in August 2009. It is incredibly easy to do and everyone should give it a try.

already have....and I love meat I just think being open to alternatives is a good thing...I found a vegetable curry with chickpeas that I am going to try as well as a tomato and zucchini tart....it helps me eat a variety of things and look for in season items

No problem! But my meat loving hubby to be would have something to say about it!! I'm sure i could convince him 1 day per week. We shall see..

yes because I already do...and I am sooo a meat eater...I love a good steak.....but I also like the variety of trying different things that was meatless.....see meatless means no meat...it does not mean one of the vegetarian styles of eating....so lose the meat and try something with cheese or eggs

As a grad student with insufficient funds, I go meatless several days a week (much cheaper, healthier, better for the environment). If I do cook meat, it's fish. I leave the pork cookin up to the experts at all my favorite Portland restaurants. It's amazing how much money you save by not buying meat! (PS the sweet potato/black bean recipe is one that's been in my repetiore for years..I use canned tomato in the winter though)

Yes, we could do it twice a week. All the recipes I have tried from Eating Well magazine have been delicious, nutriscious and fairly easy. I love it!

Yes, and we often do. But, we generally do not substitute tofu and such (which we do like.). Good old Mac and Cheese, bean soups and salads, and such make wonderful meatless meals. Kathie

Yes I could. I've done it several times for a month at a time. I took a break from eating meat in January and ever since then, I eat very little. I have been thinking about cutting back again so, I think I am going to go ahead and start for the rest of this year. Thanks for the timely encouragement.
